N2 - Abstract. - Reduced to the role of raw material supplier, the farm falls within various channels of the food-processing industry. Yet, the upstream or downstream links of the chain, often dominated by powerfull entreprises, have not - generally speaking - tried to exert direct control over the agricultural production. On the other hand, they maintain a tight legal and technical relationship with the primary industry. The consequence of this economic infrastructure is evident in the ever-changing configuration of production areas. The geography of agricultural systems and their dynamism cannot be understood if we disregard these basic facts.
N2 - Résumé. - L'exploitation agricole, réduite au rang de fournisseur de matière première, s'inscrit aujourd'hui dans une ou plusieurs filières agro-alimentaires. Les maillons d'«aval» ou d'« amont» de la chaîne, souvent dominés par des entreprises puissantes, n'ont cependant, en règle générale, pas cherché à contrôler directement la production agricole. En revanche, ils entretiennent des rapports juridiques et techniques étroits avec le secteur primaire. Cette organisation économique a une traduction spatiale directe sous forme de bassins de production dont la configuration évolue constamment. La lecture des systèmes agricoles et de leur dynamique est impossible à appréhender si l'on fait abstraction de ces données fondamentales.
