AbstractAntarctic krill is considered to be a very promising source of food proteins and other biologically essential components, including microelements. In the present article the microelement composition of krill proteins obtained by alkaline extraction is studied. The studies showed that the ash content of the isolated krill proteins is rather constant and does not depend on the different lots of krill. It could be demonstrated that isolated krill proteins are a source of biologically essential microelements. The fluorine and heavy metal contents are within allowable limits and do not restrict the use in food production.
