<jats:p>The "convention theory" agrees with the idea that the market mechanisms are not sufficient for explaining economic coordination and states the assumption that actors use conventional indicators for defining goods quality. These indicators lay as basis of several coordination models which make the market to work. These models have to be analysed, as well as the transition process from one model to another and the role of the institutions in this process. The aim of this article is to deal with such questions by making a case analysis in the field of the organic farming, which seems to be highly exemplary.</jats:p>
