  • Description: Louis Pasteur was the first dean of the Science Faculty of Lille from 1854 to 1857. While he carried out energetically his administrative and teaching duties, he continued his research on crystallization on the deviation of the plane of polarization by similar molecules. He took advantage of requests from regional industries, particularly about beet sugar, to study the origin of fermentation process. This was the starting point of his later works.
