Résumé : L'étude des modes de consommation des minorités asiatiques et maghrébines de la région parisienne met ici en relation la consommation domestique et V approvisionnement en milieu urbain. Dans le domaine alimentaire traité, on tente de définir des "consommations culturelles" procédant ď accommodations et de préservations de traditions tant dans la définition des repas que dans les univers ď approvisionnement. Comparant ces deux minorités, ce sont surtout les formes diverses de "consommation de la ville", résultant ď articulations spécifiques entre groupes domestiques et espaces publics, en particulier espaces marchands (de caractère ethnique ou non) qui retiennent l'attention. Ces formes sont dites constituer les éléments coutumiers de l'exercice du "droit de cité".
ANNE RAULIN The study of the consumption pattterns of the Asian and North African minorities in the Paris area here correlates domestic consumption and supplying in the urban environment. In the food realm surveyed, "cultural consumptions" are defined, accommodating and preserving traditions in meal formats and cycles as well as in choices of places of supply. Comparing those two minorities, we focus on the various patterns of "consumption of the city", resulting from specific articulations between domestic units and public spaces, especially commercial spaces (with or without ethnic definition). These patterns are said to contitute the customary elements of the practice of "freedom of the city".
